Single Serving Meal Prep Lasagna (Microwaveable)

This individual size lasagna can be assembled ahead of time and cooked in just a few minutes in the microwave!

Yield: 4 servings

Preparation Time: 20 min; Cook Time: 3-5 min per serving (microwave)

Ingredients

Essential Everyday Lasagna Noodles

1/2 pound ground beef or Italian sausage

1 1/2 cups Essential Everyday Marinara Sauce

Salt and pepper to taste

3/4 cup ricotta cheese

1/2 cup Essential Everyday Shredded Parmesan and Romano Cheese Blend

3/4 cup Essential Everyday Shredded Mozzarella Cheese, divided

Directions:

Cook lasagna noodles according to package directions, draining about 2 minutes before fully done. Set aside.

In a skillet over medium heat, cook the ground beef or sausage until browned and fully cooked. Drain excess fat. Stir in marinara sauce and season with salt and pepper.

In a bowl, combine ricotta cheese and shredded Parmesan and Romano cheese until smooth.

Assemble individual lasagnas as directed below.

Using 4 microwave-safe containers (2-3 cup capacity), layer each as follows:
- Thin layer of meat sauce
- 1 lasagna noodle (broken to fit)
- About 1/4 cup ricotta mixture
- About 1/4 cup mozzarella (divided across layers)
- Another layer of sauce
- Second noodle
- Remaining ricotta mixture
- Sauce and mozzarella on top

Cover and refrigerate for up to 4 days.

To serve:
Microwave on high for 3-5 minutes, until cheese is melted and bubbly and lasagna is heated through. Let rest 1 minute before eating.
