Fish and Vegetable Chowder

Ingredients

potatoes, peeled and chopped

|
|

chicken broth

|

(14.5 ounce) diced tomatoes
|

carrot, chopped
|
|
|
| 1/2 |
cup |
celery, chopped
|
|
|
| 2 |
teaspoons |
Italian seasoning
|
|

| 1/4 |
teaspoon |
cayenne pepper
|

| 3/4 |

(12 ounce) fresh or frozen cod, cut into 1-inch pieces

Directions:
In a large dutch oven, cook bacon until crisp; drain fat, reserving 1 tablespoon in pan with bacon. Cook onion in drippings until tender. Stir in potatoes, broth, undrained tomatoes, carrot, celery, Italian seasoning and cayenne pepper. Bring to boil; reduce heat.
Cover and simmer for 15-20 minutes or until potatoes are tender.
Stir in fish. Return to boiling; reduce heat. Simmer for 3-5 minutes or until fish flakes easily when tested with a fork.
